सामग्रीहरी प्याज ----चार से पांच स्टिकप्याज ----दो बड़े साइज कीलाल टमाटर -----पांच मीडियम साइज केलाल मिर्च चार-पांच घंटे भीगी हुई ----6/7लहसुन की कलियां छिली हुई ----50 ग्रामटोमेटो सॉस ----आधी कटोरी/ 40 ग्रामधनिया पत्ती ----50 ग्राम विद स्टेमनमक ----स्वाद अनुसारचीनी ----एक चम्मचअदरक ----2 इंच टुकड़ातेल-----चार चम्मचसफेद सिरका ----दो चम्मचसोया सॉस ----आधा चम्मचबनाने की विधिअदरक और लहसुन को बिल्कुल ही बारीक काट लेंगे। बाकी सभी सब्जियों को मोटा मोटा काट लेंगे। लाल मिर्च भीगी हुई है जो, उन्हें उबाल कर पीस लेंगे सॉस के साथ में। अब कढ़ाई गैस पर रखेंगे फ्लेम ऑन करेंगे उसमें चार चम्मच तेल, सरसों का तेल या फिर रिफाइंड ऑयल जो भी यूज कर रहे हैं डाल देंगे, तेल के थोड़ा सा गर्म होने के बाद उसमें बारीक कटी अदरक और लहसुन डाल देंगे उसको 2 से 3 मिनट तक मीडियम आंच पर भून लेंगे उसके बाद इसमें मोटी कटी हुई प्याज डाल देंगे इसे भी 1 मिनट तक भूनें साथ में । १ मिनट भून लेने के बाद इस में हरी प्याज डाल देंगे इसको भी 2 मिनट तक भूनेंगे अब इसमें स्टेम के साथ कटी हुई धनिया की पत्ती डालेंगे थोड़ा सा चलाएंगे और फिर टमाटर कटे हुए इसमें डाल देंगे। अब इन सभी चीजों को मीडियम फ्लेम पर तब तक भूनना है जब तक सब्जियां बिल्कुल तेल ना छोड़ने लग जाऐं, जब सब्जियों को भूनते हुए तेल बिल्कुल अलग होने लगे तब इसमें टोमेटो सॉस के साथ पिसी हुई उबली लाल मिर्च डालेंगे, लाल मिर्च को पीसने के पहले उबालना बहुत जरूरी है। आप इन सब को साथ में 1 मिनट तक और भूनेंगे अब इसमें आधा चम्मच सोया सॉस और दो चम्मच वाइट विनेगर डाल देंगे थोड़ा सा मिक्स करेंगे उसके बाद मिक्सचर को ठंडा होने देंगे फिर इसे ग्राइंडर में पीस लेंगे अगर इसको पीसने में थोड़ी दिक्कत आ रही है तो इसमें पानी की जगह टोमेटो सॉस और डाल दें आसानी से पिस जाएगा इसको बहुत ज्यादा बारीक नहीं करना है,अभी आप की चटनी तैयार है जिसे आप एयर टाइट कांच के कंटेनर में फ्रिज में 1 महीने तक रख कर आराम से यूज कर सकते हैं और किसी भी तरह की सब्जी या ब्रेकफास्ट के साथ इसे डिप की तरह भी यूज कर सकते हैं।Ingredients----Spring onions ----four / five sticks Onion ----two big size Red tomatoes ----five medium size Red chillies soaked ----6/7 Garlic buds peeled ----50 grams Tomato Sauce: Half bowl / 40 grams Coriander leaf ----50 grams with stem salt ----recording to taste Sugar ----1spoon Ginger ----2 inch piece Oil ---- four table spoons Two tablespoons ----white vinegar Soya Sauce ----Half teaspoonProcedure----Ginger and garlic will be finely chopped.
